PURPOSE:To prevent the generation of fungi during preservation by sticking dehydroacetate to the bamboo skewer. CONSTITUTION:The bamboo skewer is immersed into an aq. soln. of the dehydroacetate to impregnate the dehydroacetate into the bamboo skewer and thereafter, the bamboo skewer is dried. The concn. of the dehydroacetate in the aq. soln. for immersion is =0.2wt.% and more particularly preferably about 0.3 to 0.5wt.%. The immersion time is determined according to the concn. of the dehydroacetate and is =2 minutes, more preferably about 3 to 10 minutes. The liquid is preferably exchanged or the dehydroacetate is freshly added to the liquid when the pH of the immersion liquid decreases to 8.0 (20 deg.C). The dehydroacetate is permitted as a food additive and has 2000mg/kg acute oral LD50 and high safety to the human body. In addition, the dehydroacetate does not destroy the tissue of the bamboo material. The generation of the fungi in the long-term preservation is prevented over a long period of time.
