In the manufacture of fillings, the cutting of meat takes place in a special operating cycle, after which the cut mass is emulsified with additives contained therein, which process is completely independent from the cutting process. As a result, the degree of cutting can be regulated independently of the degree of emulsification. For example, it is possible to manufacture fillings with relatively long fibres in spite of extensive emulsification, which is not possible with known apparatuses, in which cutting and emulsification take place simultaneously. The emulsification takes place in an apparatus with a conical rotor (a) and a stator (b), the mutually facing surfaces of which are provided with grooves which drive the material forwards and promote turbulence and thus emulsification. The degree of emulsification can be regulated by changing the gap width between rotor (a) and stator (b). IMAGE
