CALCIUM-SUPPLEMENTED BEVERAGES AND BEVERAGECONCENTRATES CONTAINING LOW LEVELS OF SULFATEABSTRACT OF THE DISCLOSUREBeverages and beverage concentrates nutritionally supple-mented with significant levels of solubilized calcium and containinglow levels of sulfate, preferably in combination with low levels ofchloride, are disclosed. These beverages and concentrates alsocontain specified levels of edible acids selected from phosphoricacid, citric acid, malic acid, fumaric acid, adipic acid, gluconicacid, and lactic acid, as well as mixtures of these acids. Theparticular acid systems are selected to provide the desired flavorand sourness character for the beverages and concentrates.Inclusion of low levels of sulfate/chloride in these beverages andconcentrates provides a quicker onset of sourness, prevents orreduces aftertaste effects and improves the solubility of thecalcium, particularly when high levels of phosphoric acid or citricacid are used. Inclusion of sulfate/chloride also prevents orreduces the precipitation and deposition of calcium salts onequipment surfaces during the pasteurization or sterilization ofcalcium-containing fruit juice beverages.
