The apparatus is formed of a frame (6) that holds the container (1), having a thick base (2) and warmed by the electrical heating place (3); two baskets (7) swinging in the insulated frying chamber (19); a thermocouple (22) takes the chamber temperature that is compared with a maximum and/or with the difference from a preceding measurement allowing quick intervention. The loading mechanism consists of a hopper (26) with a temporary closing panel (27); the discharging mechanism consists of a hinged hatch (11) closed by the action of a spring (13); the front panel (12) and the hopper (26) are easy to dismantle; seals (14, 15 and 29) are provided on the frying chamber. The apparatus is easy to clean as all the parts of the frying chamber are accessible.
