A method for manufacturing cream for adjusting the fat content of milk boiler. The vat milk is used for cheese production. In order to improve the yield in the manufacture of cheese, a milk emulsion containing fat is treated for some time with ultrasound in an ultrasonic processing device, consisting of a container, preferably cylindrical (1), with inlet nozzles (2) and outlet (3) and an ultrasonic source (4) projecting into the container (1) and in the milk emulsion.
