The recovery of natural milk proteins comprises (a) adding a pptn. agent which is an anionic polysaccharide soln. to a milk fraction; (b) separating the mixt. using a centrifuge to give a natural casein concentrate and a fraction contg. the polysaccharide; (c) recycling the first polysaccharide fraction for a further sepn. of a milk fraction into casein concentrate and a second polysaccharide fraction. USE/ADVANTAGE - The product can be used for nutrition. The amt. of polysaccharide necessary is considerably reduced for 1000kg dry milk protein concentrate, only to -220kg polysaccharide are necessary. The casein concentrate has a low fat content.
