Casein is prepd. by sepg. milk serum proteins from milk contg. untreated casein in soln. Process comprises keeping the milk at 50-200 degrees C until the milk serum proteins are pptd. and sepg. the pptd. milk serum proteins, e.g. by decanting or centrifuging. Alternatively, the milk serum proteins can be sepd. by filtration, e.g. by selective molecular filtration. Water-soluble casein is obtd. and can be used in prepn. of cheese or other milk prods.
