Salty flavoured milk prod. for foods etc. - is obtd. by concentrating milk prod. free of protein, heating and cooling concentrate, sepg. lactose crystals and opt. drying remaining liq.
A prod. derived from milk is prepd. by (a) concentrating to 20-70% dry matter permeate, milk serum freed from protein, or milk or whey freed from protein and partially freed from sugar, (b) heating the concentrate, (c) cooling the heated concentrate, (d) seg. the lactose crystals formed, and (e) opt. drying the remaining liq. Concn. may be to 55-65% dry matter. The concentrate may mins. (10-25 h) at at least 40 (45-60) deg. C. Cooling is to below 20 (5-10) deg. C, and the concentrate is held at the temp. of cooling for at least 0.5 h (5-15 h). Part of the lactose may be removed before the heat treatment.
