The invention relates to a method for obtaining a natural flavour of vanilla, which comprises bringing vanilla beans in contact with enzymes of the pectinase, cellulase and/or hemicellulase type, and making a beta -glucosidase enzyme react, and extracting the natural vanilla flavour thus obtained.
