PURPOSE: To compensate a defect of difficult long-term preservation of product of KUZUKIRI (food prepared by blending arrowroot starch with hot sugar water, thinly extending by a roll, finely cutting like noodles and boiling) and to obtain a KUZUKIRI-like product. ;CONSTITUTION: A main material comprising a polysaccharide such as carrageenan or locust bean gum is mixed with an additive such as potassium salt or sodium salt in water, heated, dissolved, cooled and jellied. The jelly is made into KUZUKIRI-like jelly of any shape, put in an aqueous solution of calcium ion prepared by using a food additive such as calcium lactate or calcium gluconate or calcium of a water-soluble natural substance composition, sealed and boiled.;COPYRIGHT: (C)1995,JPO
