摘要

PURPOSE: To obtain a gelatin having good solubility and gelling property even at a low temperature in high productivity by freezing an aqueous solution of a gelatin having a specific concentration between a pair of oppositely placed cooling members cooled at a low temperature, freeze-drying the frozen product and crushing the dried gelatin. ;CONSTITUTION: This gelatin is produced by dissolving gelatin in hot water to a concentration of 20-60wt.%, keeping the obtained aqueous solution G preferably at 30-60°C, freezing the solution between a pair of oppositely placed cooling members 10, 30 cooled at ≤-20°C, freeze-drying the product and crushing the dried gelatin.;COPYRIGHT: (C)1995,JPO
