EDIBLE OIL CONTAINING DHA OIL AS MAIN COMPONENT

摘要

PURPOSE: To provide an edible oil consisting essentially of docosahexaenoic acid(DHA) oil (containing 25-50wt.% DHA) contained in fish oil. ;CONSTITUTION: This edible oil is obtained by adding 0.1-10wt.% lemon to DHA oil. Thereby, oxidation of DHA oil in heating is prevented and odor (fish odor) which DHA itself has is masked. Example used: 3g of DHA oil in which 3wt.% lemon oil is added is added to 100g hot cake raw material and the mixture is cooked by heating to prepare hot cake. The hot cake does not cause change in taste even in baking up and even in cooled state and entirely free from fish odor and has no change, compared with conventional hot cake.;COPYRIGHT: (C)1996,JPO
