PURPOSE: To cut edible roots automatically and continuously by arranging respective cutting devices between a first and third along the carrying passage of root vegetables in order and cutting a main body part to two pieces after cutting the leaf parts and calyx parts of the edible roots in order. ;CONSTITUTION: When edible roots are cut, for example, after holding the leaf part (h) of a turnip K, at first the lower surface of a root part (k) is thrown in from respective front ends 31A, 32A of two rails 31, 32 of a first cutting part 4 so as to be pressed to the recessed part of a receive stand 20. Then, the turnip K is carried while keeping a stable posture under such state that the root part (k) is supported to the receive stand 20 and both shoulder parts of a calyx part (i) are supported by both rails 31, 32 respectively. At this time, the leaf part (h) of the turnip K projected from the space between both rails 31, 32 is cut. When the turnip K is carried to a second cutting part 5 and moved to the cutting surface of a rotary edge 50, the calyx part (i) is completely cut off and removed.
