PURPOSE: To obtain a novel DNA fragment which originates from a microorganism belonging to Aspergillus, has a specific length of base sequence and a specific restriction enzyme map, includes the tannase gene and can efficiently produce tannase useful as a black tea cream-down inhibitor. ;CONSTITUTION: This novel DNA fragment originates from a microorganism belonging to Aspergillus, for example, Aspergillus oryzae TH strain (IAN2636), includes the gene encoding tannase having 3563 bp base length and a restriction enzyme map given in the formula. The DNA fragment is incorporated into a plasmid vector to form a recombinant plasmid and the plasmid is transduced into a microorganism belonging to Aspergillus to manifest the gene whereby tannase which can inhibit cream down of black tea and clarify beer is produced efficiently. This fragment is obtained by separating the chromosomal DNA from Aspergillus oryzae TH strain, treating the DNA with restriction enzymes and cloning the product using a probe.;COPYRIGHT: (C)1996,JPO
