The object of the invention is characterised by the technological innovation in the process of the extraction of olive oil. The characterisation is represented by the reutilization of the vegetative waters in the process of grinding and pressing the olives and by the dehydration of virgin olive residues, enriched with vegetative water. The prefixed objective is that of reducing and/or digesting the vegetative waters, improving the quality and quantity of the produced oil and reutilising the final solid residues as integration for fertilisers and/ or fertiliser, apart from energetic purposes. The dehydration is obtained through a chemical reactor that has a high absorbtion capacity; this reactive substance is the calcium oxide (CaO). The chemical-physical reaction deriving from it, produces a reduction of the humidity rate in the olive residues through the interaction of the reactive substance and through the production of exothermic heath that such reaction develops. In order to improve its fertilising characteristics, the calcium oxide can be meshed with azotised substances (N), phosphate (P2O5) and potassium (K2O).
