The present invention discloses a process for the preparation of non-covalent polysaccharide-protein associations having immunomodulating and haemapoietic restoring pharmacological activity. It is characterized in that those associations are prepared from the combinations selected from seeds or seed flours and dead yeasts or their dried extracts after an spontaneous fermentation/extraction process controlled in a specific medium, followed by a controlled chemical-enzymatic lysis and by a concentration process and further purification by adsorption or exhaustive dialysis and drying. Said associations in the adequate galenic forms are applied in the pharmaceutical industry the use being in human and animal medicine.
