PACKED RICE CAKE-LIKE FOOD USING RICE OR STARCH POWDER AS MAJOR RAW MATERIAL AND ITS PRODUCTION

摘要

PURPOSE: To obtain a packed rice cake-like food using a rice or a starch powder as a major raw material, easily produced and capable of preserving the rice cake-like food in good condition and also maintaining the smoothness of the surface of the rice cake-like food. ;CONSTITUTION: This packed rice cake-like food using a rice or a starch powder as a major raw material is prepared by containing solidified rice flour cake 4 in a recessed part 2 formed in a packing form 3 and covering the packing form 3 with a water absorbing sheet 5 being in contact with the rice flour cake 4. Since water droplets remaining in the recessed part 2 is absorbed by the water absorbing sheet 5, the water droplets do not stay in the recessed part 2 and the solidified rice flour cake 4 does neither change its color to white due to the partial excessive water nor cause a delay in its solidification. Also, since, in the case of drying, the water is discharged from the water absorbing sheet 5, the rice flour cake 4 does not get cracks due to the excessive drying and is preserved in a good condition. Further, it is possible to preserve it without partially forming uneven parts in the surface of the rice flour cake and to maintain its smoothness.;COPYRIGHT: (C)1997,JPO
