The invention relates to a method of cooking food without fat frying wherein the food undergo a first cooking step using a microwave or using steam or a steam mixture of water and air, at a temperature of 95 to 150 degree C followed by a second firing step in a stream of dry air at a temperature of 200 to 400 degree C. The invention also relates to an apparatus for cooking without fat frying of foods, comprising: a cooking chamber in which is arranged a supporting device for frying foods; a circulation or air drive device; a cooking chamber of the heating device and / or the air entering the oven; and means for generating steam and driving in the cooking chamber, and means for alternately manage a steaming and baking with hot air.
