FIELD: food industry. SUBSTANCE: method involves cutting meat into parts, then defrosting it in cutting unit of grinder equipped with plates and rotating knives joined with them. It is done simultaneously with chopping fresh-killed and chilled meat. Each stage of process is cyclically repeated, and at final stage, meat pieces are rotated by knife vanes, and at completion of reciprocating movement to plate, larger part of them is fed in different position in comparison with previous cycle of operation. Meat tissues are heated under the action of variable loads. At the beginning of defrosting, meat pieces with yet undefrosted hearts are chopped by scraping surface layers against holes edge placed at outlet of cutting unit of grinder. Grinder knives are one-sided, while plates are installed so to form gaps between counteropposed by rear sides knives. Vanes of knife interacted with plate placed at outlet of cutting unit, are provided with longitudinal teeth alternating with cavities.
