PURPOSE:To enable concentration of salt and water contents to be calculated by using a two-variable multiple regression expression where two types of physical amount are independent variables and concentration of salt and water as a subsidiary variable. CONSTITUTION:A cream within a cream tank 1 is transported to a butter machine 3 by a cream pump 2. Also, salt slurry within salt slurry tank 4 is transported to a machine 3 by a salt pump 5 and water within a water tank 6 is transported to the machine 3 by a water pump 7. Further, butter which is discharged from the machine 3 is transported to a butter tank 9 through a butter transport pipe 8. A dielectric constant meter 10 is placed at the transport pipe 8 for measuring dielectric constant of butter and transmitting it to an operation and a control device 11. On the other hand, a specific gravity signal which is detected by a gravimeter 13 is fed to the device 11. Then, drive control signal of pumps 5 and 7 is output according to calculated concentration, the pumps 5 and 7 are operated, and amount of salt slurry nd water supplied to the machine 3 is controlled.
