PROBLEM TO BE SOLVED: To provide a means for producing Japanese rice crackers by which the production of the Japanese rice crackers having a good baking efficiency and those containing beans can uniformly and simply be carried out. ;SOLUTION: Japanese rice crackers are produced by carrying out a rolling step with a rolling roll 1 equipped with many uneven ridges 11 and 12 parallel in the shaft direction of the rolling roll 1 and a rolling roll 2 having many uneven ridges parallel in the outer peripheral direction of the rolling roll 2, forming a sheet material B having uneven ridges crossing on the face and back sides and then passing the resultant sheet material B through each of a demolding, a drying and a baking steps according to a conventional method.;COPYRIGHT: (C)1998,JPO
