PROBLEM TO BE SOLVED: To provide production of salted guts of bonito and production of salted guts of bonito in package with which the degradation of quality caused by degeneration and oxidization due to aerobic bacteria is especially prevented. SOLUTION: After salting processing mixing salt with the guts of bonito, this is ripened in a pressure reduced and air released or inactive gas replaced container, and processing to the end of ripening is performed inside the pressure reduced and air released or inactive gas replaced container. The salted guts are processed into fine pieces and ripened. In the case of salting or/and initially ripening the guts, the guts are ripened while additionally conditioning salt lacked after the removal of generated separate water. The salted guts of bonito produced like this are seasoned as they are or after being processed into fine pieces, charged into the package and sealed. After the sealed container is filled with the salted guts of bonito, the container is sealed by pressure reduction and air release or inactive gas replacement or sealed by a cap equipped with a deoxidation agent.
