PURPOSE: To obtain a soybean protein capable of forming a transparent solution and transparent and firm gel which have not been obtained hitherto and soybean milk as the raw material for the protein without carrying out complicated fractionation operation. ;CONSTITUTION: This defatted soybean milk is capable of permeating ≥85% of soybean protein in the defatted soybean milk through a membrane filter having 0.22μm pore diameter and has ≤1.2 optical density in 600nm of the defatted soybean milk having 2.2% soybean protein concentration. This soybean protein is capable of permeating ≥65% of soybean protein in soybean protein solution through a membrane filter having 0.22μm pore diameter and has ≤2 optical density in 600nm optical density and ≤400cps viscosity.;COPYRIGHT: (C)1996,JPO
