PURPOSE:To obtain wheat flour having low ash content and good flowability and resistant to blocking even after being laid under a load over a long period by using wheat flour having specific properties as a component. CONSTITUTION:Stock wheat flour having a protein content of 11.5-13.5wt.% and an ash content of 0.32-0.55wt.% is sieved to obtain wheat flour passing through a sieve having a mesh size of 75mum and containing =60wt.% of fraction remaining on a sieve having a mesh size of 38mum. The objective wheat flour composition is prepared by compounding the above wheat flour with 0.2-1.0wt.% of a thickener (e.g. sodium alginate) and 0.02-0.08wt.% of malt having an alpha-amylase titer of 0.03-0.11 unit/mg in terms of Bernferd.
