PROBLEM TO BE SOLVED: To solve the problems of conventional fish oil and extract caused by the remaining gill part of bonito head such as the black color and high impurity content of fish oil and the intense bitter taste of extract losing the deliciousness and unsuitable for food use. ;SOLUTION: This process for producing a high-quality fish oil and a high-quality edible extract from a bonito head comprises a step to cut the bonito head with a cutter in such a manner as to remove the gill part for respiration, a step to wash the cut head part with a washer, boil in a boiling machine and separate into an oil- containing stock liquid extract and a solid component with a press, a step to separate the obtained oil-containing stock liquid extract into a solid component and an oil- containing stock liquid extract with a screw decanter, a step to separate the obtained oil-containing stock liquid extract into an oil, a stock liquid extract and a solid component with an oil separator by centrifugal separation and a step to further remove the solid component from the obtained stock liquid extract with a filter, store the obtained stock liquid extract in a storage tank and concentrate by evaporating water in an evaporator, condense the generated steam with a vapor condenser, cool the condensed liquid and store in a condensed liquid tank and store the concentrated extract in a concentrated extract tank to obtain the objective extract.;COPYRIGHT: (C)1998,JPO
