PURPOSE: To provide the structure of the cooking surface of a cooking apparatus for high-temp. heating which obscures the traces of scorching of food even if food is cooked at a high temp. ;CONSTITUTION: This structure of the cooking surface of the cooking apparatus for high-temp. heating has a metallic blank material 10 which constitutes the cooking surface, a hard inorg. layer 3 which is provided to cover at least the surface to be constituted as the cooking surface of this metallic blank material 10 and consists essentially of the metal oxide formed by applying a sol-gel coating material to the surface and a non-tacky adhesive resin layer 4 which is so provided as to cover the surface of this hard inorg. layer 3.;COPYRIGHT: (C)1994,JPO&Japio
