PURPOSE: To produce noodles excellent in quality thereof by utilizing fractionated gliadin of wheat gluten. ;CONSTITUTION: A fractionated substance, fractionated from wheat gluten and consisting essentially of gliadin is used for the purpose of improving the noodle quality such as preparation of viscoelastic Chinese noodles or wheat vermicelli having strong springiness, prevention of deterioration in the noodle quality or improvement in the noodle quality in using a main raw material other than wheat flour such as modified starch and prevention of retrogradation of noodles in long life(LL) noodles.;COPYRIGHT: (C)1994,JPO&Japio
