The present invention relates to a method of producing oligosaccharide syrups,in particular to the production of syrups having a high concentration ofsaccharides with a degree of polymerization of at least 2, comprising thesteps of: enzymatic reaction of a substrate at a temperature in the range of50 ~C to 100 ~C obtaining a saccharide solution comprising monosaccharides anddisaccharides, trisaccharides and higher saccharides; nanofiltration of thesaccharide solution at a temperature in the range of 60 ~C to 100 ~C obtaininga syrup essentially comprising disaccharides, trisaccharides and highersaccharides; recovering said syrup; optionally recycling the permeateresulting from the nanofiltration step to the enzymatic reaction.
