The present invention relates to inhibitors of persulfate oxidase, aldose reductase and squalene synthetase, and the extracts from bean sprouts have inhibitory activity. This substance is useful for the treatment of gout caused by abnormality of the purine acid in relation to the persulfate oxidase and is useful as an inhibitor of aldose reductase to prevent and improve the complications caused by diabetes. In addition, by inhibiting cholesterol biosynthesis, the rate of LDL-recepto synthesis can be increased to lower the plasma cholesterol level, which can be used for the prevention and improvement of cardiovascular diseases.
