PURPOSE: An unsaturated fat acid ester of phytosterol or phytostanol is soluble in oils such as corn oil and reduces absorption of low density lipoprotein cholesterol which is harmful to the human body so that the level of cholesterol in blood is lowered without affecting absorption of high density lipoprotein cholesterol. CONSTITUTION: A method for preparing an unsaturated fat acid ester of phytosterol or phytostanol includes the steps of: dissolving phytosterol or phytostanol and unsaturated fat acid in a non-polar organic solvent; adding a basic catalyst to the mixture; adding a carboxyl group activator dissolved in a non-polar organic solvent to activate an esterification reaction; removing the solvent from the reactant obtained in the previous step under vacuum; adding methanol or a mixed solvent of methanol and acetone under stirring; and performing precipitation.
