PURPOSE: Provided is a method for recovering unreacted sugar generated in the manufacturing process of sucrose fatty acid ester (SFE) where sugar and C8¯C22 high fatty acid ester are reacted in a polar solvent such as DMF, DMSO in the presence of an alkali catalyst. CONSTITUTION: In the method, a mixture of C3¯C5 alcohol and aromatic hydrocarbon is used as a solvent to extract unreacted sugar in the temperature range of 70 to 100deg.C, and also the blending ratio of alcohol to aromatic hydrocarbon is adjustable between 0.1 to 10 according to the hydrophile-lipophile balance (HLB) of sucrose fatty acid ester. For the optimal recovery, the amount of solvent is preferably 50 to 150pts. wt based on the weight percent of a reactive solvent comprising high fatty acid ester and DMSO. The particle size of the over 95% recovered sugar is above 500m so that it is easy to separate or filtrate recovered sugar in following processes.
