A fermented, alcohol-free fruit juice drink with health-promoting properties and with a refreshing acid taste is obtained exclusively from natural materials, the acid being obtained microbiologically directly during the production process. The drink also contains vitamins and lactic acid bacteria and has good storage properties. A fermented, alcohol-free fruit juice drink with a natural sugar content and a content of weak acid obtained by fermentation and transformation of the EtOH is new in that (i) it contains fructose, fruit juice vitamins, ascorbic acid from the oxidation of the EtOH and several organic acids with a high proportion of gluconic-, acetic- and L(+)-lactic-acids; (ii) it is free of pathogenic germs; and (iii) it has an average alcohol content of 0.035 volume % and contains a live microorganismic symbiosis system with Acetobacter spp, Lactobacillus spp and Gluconobacter spp as bacteria and Brettanomyces intermedius, Brettanomyces lambicus, Brettanomyces custersii and Zygosaccharomyces baillii as yeasts. There is also an Independent claim relating to enzymatic production of the drink.
