PROBLEM TO BE SOLVED: To obtain a dried material of plants represented by a dried chlorella capable of exhibiting rapid dispersibility in an aqueous medium such as water and maintaining the suspended state for a long period and a beverage, a colorant and a feed for animal planktons using the dried material of the plants and to provide a method for producing the dried material of the plants. SOLUTION: A suspension of chlorella mass cultured by a usual method such as a method for outdoor pool culturing or a method for tank culturing is subjected to centrifugal separation and washing with water is repeated. The washed suspension is then dehydrated. The chlorella suspension at a high concentration obtained by the dehydration is heat-treated by using a plate type heat exchanger for heating. After the heat treatment, the suspension is passed through a plate type heat exchanger for cooling and rapidly cooled. The chlorella suspension after the heating and cooling is freeze-dried to afford the dried chlorella. Water-soluble saccharides having one or more selected from the group consisting of dextrin, cyclodextrin and oligosaccharides are preferred as the water-soluble saccharides added to the chlorella.
