The present invention relates to the preparation of a pasteurized orysterylated mesomorphic phase containing surfactants which comprises: (i) preparing a premix containing surfactants and water at a temperature above the Krafft temperature of the surfactant and below a layered cubic transition temperature of the surfactant-water mixture; (ii) the premix is heated to a temperature above the layered cubic transition temperature of the surfactant / water mixture, (iii) the premix is maintained at a temperature between the Krafft temperature of the surfactant and the layered cubic transition temperature of the surfactant / water mixture, in particular , long enough for the mixture to become a continuous layer; and (iv) cooling the premix below the Krafft temperature of the surfactants. As an alternative to shear treatment, apremix may be maintained at a temperature below the Krafft temperature of the surfactant for at least 0.1 s between steps (ii) and (iii). The mesomorphic phase thus obtained, in combination with other food ingredients, is suitable for the preparation of low fat foods. The present invention also relates to foodstuffs containing the mesomorphic phase according to the invention and their preparation, as well as to the heat-treated continuous layered mesomorphic phase produced by the process according to the invention. ŕ
