PURPOSE: A method for efficiently extracting pectin and hesperidin from tangerine by extraction of hesperidin from tangerine peel and then a relatively quick extraction of pectin from the remaining residue is provided which enhances utilization efficiency of raw material by effectively recovering the titled compounds from by-products. CONSTITUTION: A residue obtained by extracting a mixture of 100 parts by weight of powdered tangerine peel and 500 parts by weight of petroleum ether, filtering and drying is extracted with 500 parts by weight of methanol for 3 hr. The filtrate is concentrated, precipitated with glacial acetic acid, filtered and dried to give hesperidin. The residue is dried at room temperatures, added with 30 times water, adjusted to pH1.6 by adding 1 mol nitric acid, extracted for 1 hr and filtered to give filtrate, which is added with isopropanol, left at room temperatures for 5 hr, filtered and dried at 37C to give pectin.
