PURPOSE: A method for manufacturing pectin from peel of tangerine, apple, orange or lemon is provided to effectively use the functions of pectin, for example, the treatment and prevention of heavy metal poisons, diabetes, intestine diseases, liver disease and obesity, and decrease in cholesterol, and also to raise the purity of the pectin by using a solvent. CONSTITUTION: Washed peel of tangerine, apple, orange or lemon is put into hot water to hydrolyze the pectin. Phosphoric acid is added to extract the pectin. The extracted pectin is separated by a decanter and concentrated by 0.14-0.2micron membrane filter. The concentrate is dried to get pectin powder. The pectin powder is treated with NaOH, alcohol and HCl, and then the precipitate is eliminated. The pectin powder is removed in moisture by using 95% absolute alcohol.
