A method for determining the sugar content of a supply of grapes for must production involves: (a) extracting a must first runnings sample from a supply vessel containing grapes and determining the sugar content of this sample; (b) extracting a grape sample from the vessel; (c) pressing must from the grapes and determining the sugar content of this sample; and (d) determining the correct sugar content of the overall supply on the basis of the measurements. An Independent claim is included for apparatus for the process, comprising a must first runnings sampler, a device for determining the sugar content of the sample, a grape sampler. a device for determining the sugar content of must pressed from the grapes and a system for determining the correct sugar content of the supply on the basis of the measurements.
