PROBLEM TO BE SOLVED: To provide a process for preparing cereal grains with an increased dietary fiber content and/or an increased resistant starch content and process tolerant grains prepared thereby, further high amylose grains with unusually high dietary fiber and resistant starch content, in particular, the preparation of improved grains by a combination of moisture and temperature conditions and further the use of the grains in the preparation of products containing starch. SOLUTION: This process for preparing the cereal grains with an increased total dietary fiber content comprises heating base grains having a total moisture content of about 8-85 mass% based on the dry mass of the grains at about 65-150 deg.C temperature under a combination of moisture and temperature conditions to provide heat-treated grains having an increase in total dietary fiber content (TDF) of at least 10%. The improved grains are uniquely process tolerant and may be processed directly into food products with little or no loss of dietary fiber and/or resistant starch content. The improved products incorporate the heat-treated grains.
