PROBLEM TO BE SOLVED: To provide a method for ageing meat-on-the-bone such as the breast meat of chicken, by which, just after internal organs are removed from a chicken carcass, the chicken carcass can be subjected to an ageing treatment in an atmosphere for preventing the proliferation of microorganisms and putrefactive bacteria, thus obtaining the meat having proper hardness, hardness irregularity and color, and to provide the ageing system for the method. SOLUTION: The ageing box system for the method for ageing the meat-on- the-bone such as the breast meat of chicken comprises a refrigerative agent box 10 for ageing the works 50 of the meat-on-the-bone such as the breast meat of the chicken, a plurality of humidification direct coolers 11 disposed to obtain an ageing air flow 26 having prescribed temperature and humidity needed for the ageing of the works 50, an air conditioner 22, a washing mechanism 23, a high performance filter-having circulation route 25, and a controller not shown in the figure.
