PROBLEM TO BE SOLVED: To provide a stirring and mixing tool to be devised through selecting a tool for preparing hand-made buckwheat noodles by using a small amount of flour, and also to provide a method for enabling easily judging the end of hydration through examining a method for hydrating buckwheat flour.;SOLUTION: This method for hydrating buckwheat flour comprises using a container such as a bowl with a capacity corresponding with the amount of buckwheat flour, a partial spray for hydration, and a mixing tool with a stirring stick fixed on a handle to easily grip so as to stir and mix the buckwheat flour and water homogeneously, wherein the end of the hydration is decided by the shininess condition of the internal circumferential surface of the bowl.;COPYRIGHT: (C)2002,JPO
