PROBLEM TO BE SOLVED: To provide a method for producing Japanese horseradish-flavored Basella rubra, taking the effect of flavor and pungent taste of cooked Japanese horseradish regardless of the harvest time.;SOLUTION: This method for producing Japanese horseradish-flavored Basella rubra comprising arranging the parts of the young vine 2 and the leaf 3 of Basella rubra 1 to a moderate size, boiling the resultant product in weak salt water for a prescribed time followed by subjecting the resultant product to a quick freezing treatment and then adding to the frozen Basella rubra the proper amount of crushed chips 11 of Japanese horseradish rootstock 8 belonging to Brassicaceae and seasonings 14 and 15 followed by packing the resultant product in a small bag 13.;COPYRIGHT: (C)2002,JPO
