This invention provides a breakfast cereal for human consumption containing at least one grain of truth and a soybean material selected from soybean flour, soy bran, soybean flakes, a soybean material or a combination of these. The soybean material contains at most 20 109 mol/g rafinose and 35 109 mol/g deestaquiose, and at least 200 109 mol/g sucrose. A process has also been provided for the production of such breakfast cereal,where at least one grain of cereal and one soja um material selected from a soybean meal, soybean bran, soybean flakes, a ground soybean bean material or its ambinations are combined, cooked to form a certain paste and a ready-to-eat cereal is formed from the cereal paste. Soya material contains at most 20 109 mol/g rafinose and 35 109 mol/g stasis, and at least 200 109 mol/g sucrose. A process of reducing the risk of coronary heart disease is also provided in humans,where a cereal containing a spawning material containing not more than 20 109 mol/g for rafinose and 35 109 mol/g for stasis, and at least 200 109 mol/g desacarose, is administered to a human being.
