PURPOSE: Provided is a process of preparing red pepper paste using an apple extract instead of water, and vegetables such as garlic, red pepper, bean, sesame, salt or the like without fish and shellfish. Whereby, the product has characteristic taste and flavor of an apple, garlic and red pepper and can be effectively used as functional food. CONSTITUTION: About 7 to 8L apple extract is mixed with 2 to 2.5kg malt and 5 to 7kg glutinous rice flour with 150 to 200 mesh, heated and mixed with 1 to 1.5kg ground garlic, 7 to 8kg salt, 13 to 14kg red pepper powder with 150 to 200 mesh and 3 to 4kg fermented soybean powder with 150 to 200 mesh, and aged for 150 to 200 days or more.
