FIELD: sugar production. SUBSTANCE: method consists in determining characteristics of solids and purity of intermediates conveyed to boiling stage; measuring, during boiling in vacuum apparatus, current characteristics of solids and purity of strike; determining content of crystals in the latter; and conducting process until specified values of contents of crystals, solids of strike, and also content of solids and purity of intercrystal solution, which one determines using preliminarily plotted nomogram. Ordinate of the latter represents scale expressing content of crystals in strike, lower part of abscissa represents scale expressing purity of intercrystal solution and its upper part represents content of solids in intercrystal solution. Some curves of the nomogram characterize change in strike content and other ones change in strike purity. In dependence on determined value of content of crystals in strike and purity of intercrystal solution, one performs correction of strike boiling process duration, final content of solids and crystals therein, solids and purity of intercrystal solution. When boiling last product strike, utilized nomogram should contain in its ordinate axis additional scale expressing amount of taken strike depending on determined value of purity of intercrystal solution and final content of crystals in strike.
