A Lactobacillus plantarum bacterium for use in the preparation of a food product or combined preparation which inhibits the growth of food poisoning bacteria. The food product and the combined preparation each contain a combination of the bacterium and at least one prebiotic oligosaccharide. The at least one oligosaccharide may be selected from fructooligosaccharides such as oligofructose and inulin and xylo-oligosaccharides. The food product may be a cultured or non-cultured dairy product including a yoghurt or cheese product. The bacterium may be Lactobacillus plantarum strain LP0407.
