PROBLEM TO BE SOLVED: To provide a upgrading agent for a Takoyaki dumpling (Japanese dumpling containing small pieces of octopus) and an Okonomiyaki pancake (Japanese pancake containing customer's favorite ingredients), making it possible that surfaces of the cakes have a crisp feeling without being deteriorated in taste of the cakes, shapes of the cakes are prevented from being crumbled, the cakes are soft and full, and agreeable to the mouth, ingredients of the cakes have juicy and soft feelings, and the cakes are light to the mouth, even in such a case that the cakes are reheated with a microwave oven after stored in a refrigerator or a freezer, to say nothing of another case that the cakes are eaten immediately after cooked.;SOLUTION: This upgrading agent for the Takoyaki dumpling and the Okonomiyaki pancake is produced by using one, two or more kinds of powder selected from grain flour, starch, a processed material thereof, and a decomposed material thereof.;COPYRIGHT: (C)2003,JPO
