PURPOSE: Provided is a method for processing ready to eat Mactra veneriformis and Marsh Clam soup, therefore, the manufactured soup has a characteristic taste and flavor. CONSTITUTION: A method for processing ready to eat Mactra veneriformis and Marsh Clam soup comprises the steps of: washing Mactra veneriformis and Marsh Clam and removing sand therefrom; repeating washing and rinsing processes; roasting the Mactra veneriformis and Marsh Clam at 150-200 deg.C for 2-5 minutes; boiling them together in water at 100 deg.C for 15-25 minutes; repeating boiling process at 50 deg.C for 1 minute and at 100 deg.C for 10 minutes and repeating the boiling process twice; adding seasonings thereto and boiling them at 100-120 deg.C for 3-6 minutes; taking the Mactra veneriformis and Marsh Clam out from the stock and separating their shells and flesh; precipitating the stock keeping the temperature to 3-4 deg.C for 1-2 hours; filtering the stock; washing and selecting the separated flesh; adding the separated flesh to the filtered stock and retort packing them.
