PURPOSE: Provided are hairtail gravy, a method for preparing the same and hard-boiled hairtail using the hairtail gravy, thereby easily cooking hard-boiled hairtail having a excellent taste and flavor. CONSTITUTION: A hairtail gravy is characteristically manufactured by boiling 80-90 part by weight of water, 2-2.4 part by weight of welsh onion, 4-4.4 part by weight of red pepper, 4-6 part by weight of radish, 4-4.4 part by weight of garlic, 0.8-1.2 part by weight of sodium glutamate, 0.9-1.2 part by weight of orange juice, and 1.8-2.2 part by weight of refined wine, based of 100 part by weight of hairtail bone.
