PROBLEM TO BE SOLVED: To provide a method for measuring the degree of maturing of meat and a maturing method of pork.;SOLUTION: This method for measuring the degree of maturing of meat comprises measuring the degree of maturing by use of a specified substance (e.g., muscle-derived protein, peptide, etc.) as an index.
