PROBLEM TO BE SOLVED: To stabilize a hot water-kneading seed by promoting alphaizing of hot water-kneading seed wheat starch and low molecularization so that alphaization is made to be carried out to equally uniformly and to contrive about speedup of the hot water-kneading seed preparation by accelerating the alphaization.;SOLUTION: A method for producing bread, or the like, comprises the steps of: supplying wheat flour from a wheat flour feed hopper 3 by the side of one end of a drum 2 of string stirring device S, supplying warm water from a water feed hopper 20, supplying liquid sugar and oil and fat, agitating the wheat flour; supplying water vapor from a blowing mouth 41 of leaving side of the drum 2 in a water vapor supply mechanism 40, blowing the water vapor to a raw material in the above stirring step; and thereafter discharging the hot water-kneading seed from an outlet 4 of the drum 2. The temperature of the warm water and the temperature of the water vapor to be applied are defined so that the kneading top temperature of the hot water-kneading seed becomes 55 to 80 °C. The alphaization of the wheat starch of the hot water-kneading seed is quickly carried out uniformly by entrainment of this water vapor.;COPYRIGHT: (C)2004,JPO
